James chose Thomas as his birthday theme this year. He was introduced to Thomas the Tank Engine by his cousin Aaron. We we go over to Carrie and Mike's house, James spends a majority of his time playing with the trains. He can get lost in them to the point where we don't realize he is still there until Godzilla, I mean sweet little Conner tramples the train tracks! So, anywho, tonight I baked his cake. I decided on a double layer cake because of the fact that I was making an eggless cake. I have been experimenting with box cakes and substituting applesauce for the eggs. Let's just say eggs hold everything together. Without them it is very difficult to get a sheet cake out of the pan without it breaking into several pieces. Here is my final product:
